Product detailed description
Tumbaga Sugarcane Decaf is a decaffeinated coffee from Colombia, sourced from smallholder farmers primarily in the regions of Cauca and Tolima, as well as Antioquia and Eje Cafetero. The name Tumbaga refers to a traditional alloy of gold and copper. Similarly, this coffee is a blend of beans from several growing regions, carefully selected to create a balanced and consistent flavour profile.
The coffee is decaffeinated using the natural Sugarcane Decaf process, known for its gentle approach and minimal impact on the coffee's original flavour. This method uses ethyl acetate derived from sugarcane, which effectively binds to and removes caffeine from the beans. The beans are soaked in an ethyl acetate solution, and the process is repeated several times to ensure thorough caffeine removal.
We roast Tumbaga for filter coffee, making it suitable for pour-over and other alternative brewing methods. In the cup, you'll find sour cherries, brown sugar and dried plums, bringing a pleasant sweetness and fruity character.
