At La Cabaña farm in Colombia, coffee production is run by the Ortiz family, who have been growing coffee for several generations. Today, William Ortiz, his brother Julian and their parents take care of the farm together. They not only work there, but also live on the farm, so coffee is a natural part of their everyday life.

Their father, Libardo Ortiz, plays an important role in the family story. He introduced his children to coffee from an early age. Today, each of them approaches coffee in a slightly different way. William represents a younger generation of farmers who combine traditional methods with new approaches to processing. He experiments with different fermentation techniques and also focuses on making the individual processes as consistent and repeatable as possible. His approach naturally complements Libardo’s more traditional perspective, which favours the clean character of classically processed coffees.

This naturally processed coffee is the Ají variety, sometimes referred to as Bourbon Ají, and grows at 1,600–1,700 metres above sea level. Although its name refers to Bourbon, genetically it is a variety of Ethiopian origin. The name Ají comes from the mucilage of the coffee cherries, whose aroma and flavour can resemble chilli pepper. This slightly spicy character can also appear in the cup, where it often complements pronounced fruit notes and lively acidity.

Roasted for filter. The result is a sweet, fruity and pleasantly complex coffee with a subtle spicy character that fits perfectly with the atmosphere of autumn days.
