Rufina is an exceptional Canephora microlot from Kiva Estate in the Penonomé region of Panama. Canephora is a species of coffee plant distinct from Arabica, traditionally associated with higher caffeine content, fuller body, and a more intense character. Thanks to careful selection and modern processing methods, Canephora is gradually finding its place in the specialty coffee world and revealing its considerable potential.
Rufina comes from the BRS2314 variety and is processed using the Anaerobic Slow Dried (ASD) method. The coffee beans undergo 10 days of anaerobic fermentation in water tanks, followed by slow and carefully controlled drying.
The flavor profile brings notes of plum jam, chocolate-covered cherries, and Amaretto. The result is a full-bodied and intense coffee with a pronounced body and rich sweetness.
The name Rufina refers to Rufina Alfaro, a legendary Panamanian revolutionary who, according to tradition, played a role in Panama’s struggle for independence. Her name also symbolically represents this small Canephora revolution, showing that the world of specialty coffee does not have to belong to Arabica alone.
