Behind Zanya are Marián from Slovakia and his partner Lim, who grew up in a farming family belonging to Vietnam’s K’ho ethnic minority. When Marián travelled to Vietnam for a holiday in 2016, he had no idea he would find not only his partner but also a new home. Through Lim, he discovered life in a small mountain village beneath Mount Langbiang, where her family has been growing coffee for generations.

He was surprised to see that despite all their hard work, local farmers lived in modest conditions, and many had never even tasted the coffee they grew themselves. Together with Lim, he decided to try a different approach. In 2018, they returned to her home village and began building their own coffee processing facilities. They learned, experimented, and gradually involved more local growers. What started as a personal story of two people has grown into Zanya, a project that now brings together more than 30 local farmers, giving their coffee the opportunity to reach people beyond Vietnam.

Supernatural is a processing method developed by the Zanya team. During fermentation, coffee cherries are kept in an open environment, allowing oxygen, naturally occurring yeasts, and bacteria to interact with them. Unlike anaerobic processing, fermentation takes place without restricting access to oxygen. Microorganisms gradually break down sugars in the fruit pulp, helping develop more pronounced and complex flavours, with vibrant fruit notes, a fuller, almost syrupy body, and a slightly wine-like character.

In our espresso roast, the sweetness of lychee meets delicate floral notes of chamomile, followed by a cocoa finish.
