This coffee comes from the Las Hortensias farm in the Palmito area of Bruselas, Colombia. The farm is led by Luisa Fernanda Nieto Zárate, originally a chef who decided to combine her culinary background with the production of specialty coffee. Her project, Kamilú, named after her family members, reflects a personal approach, strong family involvement, and a commitment to quality at every stage of processing.
The coffee is grown at an altitude of 1820 meters above sea level, where the higher elevation and specific microclimatic conditions slow down the ripening of the coffee cherries, allowing for the development of a complex flavor profile. The Bourbon Aji variety is unique not only in taste but also in appearance – the cherries resemble small chili peppers. The name “Aji,” meaning spice, refers to its subtly spicy character and an unusual aromatic profile. The coffee is processed using the honey method, where part of the fruit mucilage remains on the bean during drying, contributing to a fuller body and natural sweetness.
The cup is dominated by the freshness and subtle acidity of mirabelle plum, complemented by notes of pink pepper and a delicate creamy aftertaste. The result is a full-bodied, juicy coffee whose flavor and story come together to form a balanced and authentic whole.
