One of these methods is a unique processing technique called the natural sleeping bag, which involves fermenting coffee cherries in an enclosed environment similar to a sleeping bag. This process allows precise control of the fermentation process, which enhances the flavor. The result is a coffee with the delicate sweetness of panela and dried pineapple, complemented by the fresh acidity of red grapes.
