Above the Gera River valley in the Moyobamba region rises a hill that locals call "the pyramid." It’s after this landmark that the microlot Misterio de la Pirámide takes its name. The Cueva Castañeda family is building their farm here at 1600 masl, guided by permaculture principles and closely connected to the soil, biodiversity, and local community.
For this lot, Gover Cueva chose a less common method – anaerobic fermentation with kombucha. Adding this natural culture to a sealed fermentation environment accelerates the process while keeping it stable and well-controlled. The kombucha also enhances the development of delicate fruit-forward aromatics.
Brewed as a filter, the cup is light and refreshing, with a pronounced citrus character. Notes of yuzu and mandarin come forward, balanced by the gentle tartness of physalis.
