Mexico Santa Fé is a microlot from the Sierra Madre de Chiapas mountain range in southern Mexico, where coffee ripens in a milder, more humid climate at higher elevations.
After harvest, the coffee is washed processed—the pulp is removed soon after picking and fermentation is managed so the beans are cleaned of mucilage as thoroughly as possible. This typically results in clearer flavor definition and a clean, transparent cup.
The caffeine is then removed using water decaffeination. The principle is that caffeine is released into water, while flavor compounds remain thanks to a coffee-saturated solution; the caffeine is then separated using carbon filters.
In the cup, look for cola nut, maple syrup, and dried dates—a sweet, syrupy impression with a calm, long finish. The varietal base is Catimor (valued for yield and resilience) and Catuaí (a compact, productive variety widely grown in Latin America).
