The name ‘Daanisa’ refers to a local tree with an umbrella-shaped crown that provides natural shade for coffee trees and slows the ripening of cherries. A group of 44 farmers from Daanisa grow their coffee traditionally, without the use of chemicals, and then pass their harvest to the Dambi Uddo station where it is processed in a natural way. The cherries are then slowly dried on raised beds, often for up to three weeks, depending on the weather.
This coffee comes from the JARC 74112 variety, bred from indigenous Ethiopian varieties that are prized for their hardiness and ability to retain the floral complexity of flavours typical of the region. We roast it as an omni, so it works great for both filter and espresso.
