Finca La Sirena is among the smaller farms that rely on hand-picking and experimental processing methods. This lot was prepared using a unique Honey Peach method: freshly harvested coffee cherries are first dried for 24 hours, then pulped and fermented together with pieces of peach for three days in sealed tanks. The process is completed with slow sun-drying.
Here, the peach is not just an added fruit – during fermentation, its sugars and aromatic compounds are absorbed directly into the structure of the beans. The result is a coffee with exceptional sweetness and a delicately syrupy body.
