This coffee is created in collaboration with farmers from the Tolima and Valle del Cauca regions and the Incorporate Colombian Coffee processing center located in the central part of Colombia’s coffee-growing area. The freshly harvested coffee cherries are brought here immediately after picking, where they undergo a short fermentation in bags that are regularly turned to ensure even processing. The coffee is then washed and sun-dried on African beds in an environment with controlled temperature and natural airflow.
The company Incorporate was founded on a long-standing family connection to coffee, passed down from César Diaz’s father to his sons, and today it brings together growers from across Colombia. It aims to offer high-quality Colombian coffee with an emphasis on careful processing and the distinct qualities of each region.
The optimal altitude and the composition of the local soil contribute to this coffee’s intensity and fuller flavor. In a cup of Colombia Incorporate, we found notes of jasmine tea, dried plums, and brown sugar, making it an elegant choice for the winter season.
