Finca Milán in Colombia is a true symbol of experimental coffee fermentation. Under the Café Uba brand, the farm produces unique lots processed with the innovative Culturing method, inspired by food biotechnology. During fermentation, carefully selected yeasts and bacteria are combined with oils from pineapple and mangosteen. The process lasts 144 hours in a low-oxygen environment, with precise control of temperature, pH, and other key parameters.

This meticulous approach allows the beans to absorb aromatic compounds from the fruit and preserve them even after roasting. The coffee is then slowly sun-dried for up to 30 days, a method that protects its delicate aromas while enhancing stability and complexity.
