Although the name may remind Czechs of a familiar male given name, Finca Milán in Colombia is a symbol of experimental coffee fermentation. Under the brand Café Uba, the farm produces lots processed with the innovative Culturing method, inspired by food biotechnology. Selected yeasts and bacteria are added to the fermentation tanks together with oils from pineapple and mangosteen. The fermentation lasts for 144 hours in a low-oxygen environment, with careful control of temperature, pH, and other parameters.
Thanks to this process, the beans are able to absorb aromatic compounds from the fruit and retain them even after roasting. The fermentation is followed by slow sun-drying that takes up to 30 days. This method protects the volatile aromas and gives the coffee both stability and complexity.
In the cup, you can expect a tropical explosion of flavors: juicy pineapple, exotic mangosteen, and delicate rose notes. The profile is bright, elegant, and unmistakably expressive – exactly the kind of coffee that can broaden the horizons of even seasoned coffee enthusiasts.
