The Colombian region of Huila is considered one of the most distinctive coffee regions in the world, and this microlot from Oscar Hernández's farm Nogales, produced by one of Colombia’s most renowned farmers, Oscar Hernández, is a beautiful example of its character. Oscar also provides his processing station to other farmers in the surrounding area, who must meet his strict quality standards.
What truly sets this lot apart is its mosto fermentation processing method. During the de-pulping process, a liquid rich in sugars and naturally occurring microorganisms is produced. This liquid, known as mosto, is collected and briefly pre-fermented to activate desirable yeasts and bacteria. A small portion of this mosto is then added back into the next fermentation batch. In addition to the added mosto, the coffee also ferments in its own sugars released from the pulp. This controlled process promotes greater fruit intensity, deeper complexity, and a cleaner cup profile without overshadowing the coffee’s natural origin character.
The flavor profile opens with notes of orange marmalade and wild strawberries, gradually transitioning into caramel sweetness and a delicate chocolate finish. Balanced and juicy, this coffee performs beautifully both as a filter, where its fruity notes stand out more, and as an espresso with a fuller body and a rich aftertaste.
